Brewery information
Kenbishi Shuzō is one of the absolute foundations of sake history.
Founded in 1505 in Itami (Hyōgo Prefecture), it is considered one of Japan’s oldest still-active breweries, with more than five centuries of uninterrupted production. While many producers have adapted to modern trends, Kenbishi deliberately remains faithful to a style deeply rooted in the Edo period.
Its later establishment in Nada was no coincidence. This region is known for its exceptionally hard brewing water (miyamizu), rich in minerals such as calcium and potassium. This water promotes vigorous fermentation and results in sake with structure, depth, and a pronounced dry character, perfectly suited to gastronomy.
Kenbishi stands in stark contrast to the modern trend of light, fruity, and aromatic sake. Their style is robust, dry (karakuchi), umami-driven, and often slightly oxidative. This is sake that does not seek to impress primarily with expressive aromas, but instead develops in the glass and truly comes into its own at the table. Through the use of yamahai-shubo and the blending of aged sake, Kenbishi creates deep, layered, and richly textured cuvées.
One of the most distinctive aspects of Kenbishi is its systematic use of blending and aging. Unlike many contemporary “craft” breweries, which focus on individual batches or vintages, Kenbishi follows an approach reminiscent of solera techniques from the sherry world. The result is sake that is remarkably consistent, yet at the same time complex and deeply layered.
In addition, Kenbishi still produces its own traditional kioke barrels, a rare and valuable testament to its historical craftsmanship. The name Kenbishi, which literally means “sword diamond,” symbolizes the strength and purity expressed in every sake.
This Junmai Yamahai Zuishou (“Auspicious Jewel”) is a blend of koshu sakes aged for 5 to 15 years. In the glass, it reveals a deep, rich golden-yellow color with notes of honey, roasted nuts, and soft malt. Its medium body and refined balance create a sake that is at once complex and layered, making it suitable for a variety of drinking occasions.}
